  • Vineyard: “Viña de Vaca” is a single plot of only about 950 vines, planted in 1910 in the village of Dragonte (Corullón). The slate slope is extremely steep, about a 60% grade, at roughly 800–900 m and surrounded by chestnut trees.
  • Winemaking: Picked by hand in late September and partly foot-trodden. Fermented with native yeast in an open oak vat (foudre) for a month, with malolactic in the same vat. Aged 12 months in 500L French oak barrels.
  • Alcohol: 13%
  • Production: Only about 574–666 numbered bottles. Sources differ on the exact count.
  • Tasting notes: Deep cherry-red. On the nose, wild black and red fruit, licorice, balsamic notes, rose petal, wild herbs and a strong slate minerality. Full and fresh on the palate, with velvety tannins and a long finish.
  • Drinking window: 2025–2031
  • Food pairings: Beef, venison, lamb, game

Interesting facts

  • Luna Beberide was founded in 1987 and farms organically. It’s been working to bring back native grapes like Mencía and Godello.
  • The Paixar project works with local growers to rescue Dragonte’s old, nearly abandoned hillside vineyards. Viña de Vaca is the top wine of that project.
  • 2023 is only the second vintage of this wine. Its sister wine, Paixar A Serra 2023, scored 96+ from Wine Advocate.

Title to, and ownership of, all alcoholic beverages passes from a Licensee to the purchaser at the licensed retail premises or warehouse and state it is purchased in and the purchaser takes all responsibility for shipping it from the licensed retail premises or warehouse to his/her home state. By arranging for transportation of the alcoholic beverages, the retailer is providing a service to and acting on behalf of the purchaser. By utilizing this service, the purchaser is representing that he/she is acting in a fashion compliant with his/her local and state laws regarding the purchase, transportation, and delivery of alcoholic beverages. The purchaser represents that he/she has obtained any required permission, paid any required fees, is working through properly licensed intermediaries where required, is legally entitled to take possession of alcoholic beverages, and is legally entitled to take quantities ordered and once again authorizes that he/she is 21 years of age.

Generally, we do not ship internationally, as some countries have restrictions on wine/sake shipping. Please send an email to elizabeth@inthecru.com before purchasing. In all cases, local taxes and shipping will be paid by the purchaser.

Signature Policy

For successful delivery of your wine or sake on the initial try, we highly advise selecting an address where an individual aged at least 21 is present to sign for the package. Legally, wine cannot be left without such a signature. Unfortunately, we are unable to refund shipping fees for packages returned due to the absence of an adult for signing. Shipments cannot be sent to APOs, FPOs, or P.O. boxes. Additionally, deliveries will not be made to individuals deemed intoxicated by the driver.
