The Winemaker

Champagne Clandestin is a collaboration between Bertrand Gautherot (the acclaimed grower behind Vouette & Sorbée) and his protégé Benoît Doussot. The project focuses on small-parcel Pinot Noir sites in the Côte des Bar, farmed organically and vinified with a minimal-intervention philosophy. Their goal is to produce terroir-driven Champagnes with nothing added or taken away—native yeast fermentations, barrel aging, and zero dosage to preserve purity and site expression.

Clandestin has quickly become one of the most exciting new grower-Champagne projects, producing wines that emphasize precision, minerality, and transparency of terroir.

The Wine

Boréal is a Blanc de Noirs made from 100% Pinot Noir sourced from north-facing vineyards in Buxières-sur-Arce in the Côte des Bar. These cooler sites give the wine exceptional freshness and tension.

The grapes are hand-harvested, fermented with indigenous yeasts, and aged in neutral oak barrels before bottle aging on the lees. The wine is bottled Brut Nature (0 g/L dosage) to showcase the pure character of the fruit and terroir.

Flat Rate shipping for $35 for all purchases under $500. For any order over $500, we offer free shipping.

International Shipping

Generally, we do not ship internationally, as some countries have restrictions on wine/sake shipping. Please send an email to elizabeth@inthecru.com before purchasing. In all cases, local taxes and shipping will be paid by the purchaser.

Signature Policy

For successful delivery of your wine or sake on the initial try, we highly advise selecting an address where an individual aged at least 21 is present to sign for the package. Legally, wine cannot be left without such a signature. Unfortunately, we are unable to refund shipping fees for packages returned due to the absence of an adult for signing. Shipments cannot be sent to APOs, FPOs, or P.O. boxes. Additionally, deliveries will not be made to individuals deemed intoxicated by the driver.
